I’m always looking for recipes that are \u00a0incredibly delicious, easy and fast to make and full of healthy YUMMY AGING goodness. Here are 2 of my favorite YUMMY eats. LOOK at what they contain and what they do!<\/p>\n

Tomatoes<\/strong> and avocados<\/strong> contain carotenoids, an antioxidant that lowers the risk of heart disease, some types of cancer and helps strengthen the immune system.\u00a0Nuts<\/strong> are one of the best sources of protein and Omega-3 fatty acids, they are rich in fiber, B vitamins, magnesium and antioxidants such as Vitamin E and are one of the top foods known to lower cholesterol levels.\u00a0Red peppers<\/strong> stabilize blood sugar levels and lower LDL.\u00a0Collard greens, romaine lettuce and\u00a0sprouts<\/strong> are packed with B vitamins and aid in lowering cholesterol levels.<\/a><\/p>\n

RAW COLLARD WRAPS (pictured)<\/strong><\/p>\n

4 large collard leaves<\/p>\n

1 red pepper<\/p>\n

1 avocado<\/p>\n

2-3 ounces alfalfa or sunflower sprouts<\/p>\n

1 cup raw walnuts<\/p>\n

1 tbsp tamari<\/p>\n

2 garlic cloves<\/p>\n

1 inch piece ginger<\/p>\n

1 tsp virgin olive oil<\/p>\n

Wash collar leaves, cut off white stem at the bottom that has no leaves and place in a bath of warm water with the juice of half a lemon, Soak for 10 minutes. Dry leaves. Using a knife thinly slice down the central root creating 2 halves.<\/p>\n

Slice avocado and pepper<\/p>\n

In a food processor combine walnuts, tamari, cumin, ginger, garlic and olive oil. Pulse until combined and mixture clumps together.<\/p>\n

Raw Collard Wrap is full of YUMMY goodness<\/p><\/div>\n

Raw collard wraps for grab and go munching<\/p><\/div>\n

Place collard leaf in front of you and layer nut mix, red pepper slices, avocado slices, a drizzle of lime juice and alfalfa sprouts. Fold over top and bottom and roll up sides. Slice in half secure with pick.<\/p>\n

NUT TACOS WITH LETTUCE WRAP<\/strong><\/p>\n

Taco \u00a0(nut) meat<\/strong><\/p>\n

2 cups walnuts, soaked 4-6 hours<\/p>\n

1\/4 -1\/3* cup tamari (* for me 1\/3 cup makes filling a little too salty I use 1\/4 cup)<\/p>\n

1 bunch cilantro<\/p>\n

1 tbsp\u00a0 ground cumin<\/p>\n

\u00bd tbsp coriander<\/p>\n

\u00a0Wrap and toppings<\/strong><\/p>\n

1 head romaine lettuce<\/p>\n

3 tomatoes, sliced<\/p>\n

3 avocados, sliced<\/p>\n

Nut Tacos are fresh and easy<\/p><\/div>\n

Nut Tacos are easy to assemble<\/p><\/div>\n

Process all taco meat ingredients in food processor until mixture resembles ground taco meat.\u00a0Remove and set aside.\u00a0Wash lettuce leaves.\u00a0Prepare tomatoes and avocados.\u00a0Fill lettuce leaves with taco filling and toppings.<\/p>\n
